Ep. 12: Yeast In Baking

Yeast: is a single-celled fungus that is used in baking and brewing through a process called fermentation, which causes bread to rise most commonly.
.
Yeast Activation: the sugar feeds the yeast, and the warm water/milk activates the yeast. Both ingredients start the fermentation process, which encourages the yeast to foam and in turn baked goods to rise.
.
Hot Tip: yeast activates using a warm liquid such as water or milk and sugar. Then it needs time to foam, if the yeast does not foam after ten minutes, the yeast will not do its job to make bread rise so start over.

Room Temp: room temperature refers to ingredients being the same temperature as the room, i.e., the kitchen temperature is usually around 70-80 degrees.

Softened: refers to butter being both room temperature as the room, i.e., the kitchen temperature is usually around 70-80 degrees, but also cooled enough that the oil and grease in butter is easy to spot.

Hot Tip: Leave the butter out on the counter for a few hours to help it get to a room temp consistency. Leave the butter out overnight to help it get to a softened consistency.

Today’s recipe: Vegan Pozole Rojo, a delectable spicy corn soup that is a cold-weather staple in my house. If you have never had pozole, seriously, it is life-changing, simple to make, and feeds a whole family for days on end. Don’t forget to dress up your bowl with some of my favorite toppings: onion, shredded cabbage, freshly squeezed lime juice, and avocado. Personally, I am a vegetarian, but I do serve shredded chicken on the side for my meat-eating family members to add to their own bowls.

I’ve had two packages of puff pastry in my freezer forever and I knew I wanted to use them for a quick dessert. Well the @traderjoes apple pie filling and pumpkin butter felt so fitting for what I wanted to create. So I used some Halloween cookie cutters, to cut some fun shapes, layered some filling in the middle of two cutouts and topped with egg wash before baking. I completed the dessert by dusting some powdered sugar! Quick, simple and easy! 🎃

Cutting a heart cake

By cutting a 6 inch, 3 layer heart cake this way, I am able to get 12-16 well portioned sized slices.

Also did you know that 99% of the time, the heart cake you are seeing me decorate is my content cake? That is why I use cake drums and not boards. I will say this month only about 3 cakes I am decorating are for birthdays/special occasions, the rest are going to be the same cake decorated over and over again.

Swiss Meringue Buttercream - It is made using egg whites, granulated sugar, unsalted butter, vanilla extract, and salt. It has a very light, sweet, smooth, creamy texture that makes it super airy and very easy to pipe.
