CREAMY BUFFALO CHICKEN SALAD makes two servings, each containing 43 grams protein and 225 calories one 12.5 ounce can of chicken breast one or two stalks of celery, chopped 1/2 cup 2% cottage cheese (I use Good Culture) 2 tablespoons hot sauce (I use Frank’s Red Hot) salt and pepper to taste Blend the cottage cheese, hot sauce, salt and pepper until smooth. Drain chicken well, transfer to a bowl and add celery and creamy dressing. Stir to combine. Tasted even better if it sits in fridge for a few hours.
