Recipe here: â¨1 delicata squash, cut into 1/4-inch half rings (or any winter squash)â¨3 tbsp + 2 tsp extra virgin olive oil, dividedâ¨3/4 tsp kosher salt, dividedâ¨Black pepper, dividedâ¨2 cups shredded kaleâ¨2 cups shredded Brussels sprouts, choppedâ¨2 tbsp apple cider vinegarâ¨1 tbsp pure maple syrupâ¨1 tsp Dijon mustardâ¨1 tsp whole grain mustardâ¨1 medium apple (Honeycrisp works great)â¨1/2 cup pomegranate arilsâ¨1/3 cup toasted pecans, choppedâ¨1/4 cup unsweetened craisinsâ¨2 cups diced rotisserie chicken or turkey breast (about 9 oz)â¨2 oz blue cheese or gorgonzola, crumbled â¨Preheat oven to 425°F.â¨Toss squash with 1 tsp olive oil, 1/4 tsp salt, and 1/8 tsp pepper.
