Shawn requests these at least once a week 😆 this recipe started because I had a BUNCH of ripe bananas and didn’t want to keep making banana bread. Using bananas as part of the base gives them a different texture and adds more flavor! I also have been mixing Einkorn flour with regular flour for pretty much everything because it also adds to the flavor! Learned that from @ballerinafarm ◡̈ got the idea to make butter letters from @kaylaskitchandfix she’s a genius!!! Def need to give her a follow I love her content! Also used my new @ourplace pan, they did a collab with crocs and it is literally my FAVE color ever. Butter 🧈 yellow! Recipe below Ingredients: 1 ripe banana 3/4 cup oat milk 1 teaspoon vanilla paste 1 tablespoon melted butter (we used plant based) 2 tablespoons brown sugar 1/2 cup all-purpose flour 1/2 cup einkorn flour 2 teaspoons baking powder 1/2 teaspoon cinnamon Pinch of salt 1 cup blueberries) Directions: mash the banana until mostly smooth. Add in the egg, milk, vanilla, butter, sugar & whisk together Add in both flours, baking powder, sugar, cinnamon, and salt Mix until combined. Fold in blueberries Scoop about 1/4 cup of the mixture on the pan for each pancake! Cook for 2-3 min on both sides Enjoy! ◡̈
