Easy weeknight dinner 👏🤩 Recipe- Ingredients: 1. 1/2 box of spaghetti 2. 1/2 an onion, chopped 3. 2 cloves of garlic, crushed 4. 3 oz tomato paste (1/2 small can) 5. 1 15 oz can of tomato sauce 6. 1 package cherry tomatoes 7. 1/2 cup water 8. 1/2 cup vegetable broth 9. 1/2 cup heavy cream (or half & half) 10. 2-3 dollops fresh ricotta cheese 11. 1/2 cup fresh basil chopped (1 tablespoons spoon reserved for garnish) 12. 3 sprigs fresh oregano (stems removed) 13. Freshly grated Parmesan 14. 2 tbsp olive oil 15. Salt & pepper to taste Instructions: 1. Over medium heat add olive oil to a heavy bottomed pan 2. Add onions and garlic and cook until fragrant 3. Add in tomato paste to pot and stir 4. Add 1/2 cup water & cherry tomatoes to pot, stir and cover for 5 mins 5. Add salt & pepper, tomato sauce & vegetable broth to pot and stir, cover and let simmer for 3-5 mins 6. Add heavy cream, basil & oregano to pot & stir 7. Add uncooked pasta directly to the sauce in the pot and make sure it’s submerged 8. Dollop ricotta on top, cover, and put into the over at 350 degrees for 30 mins 9. Remove pot from the oven & stir the spaghetti mixture to break up cooked noodles and make sure everything is incorporated 10. Place into bowls, top with basil & Parmesan and serve immediately!
