MANGO BLOOD ORANGE SPICY MARGARITA MOCKTAIL

INGREDIENTS:

1/4 cup lime juice

1/3 cup blood orange juice

1 pack @drinkLMNT Mango Chili

4 jalapeño slices, set aside 2 for garnish

3/4 cup sparkling water (I used lime flavored)

Ice

DIRECTIONS:

1. Combine everything but sparkling water

in a cocktail shaker with ice and shake.

2. Pour juice/LMNT mixture into two glasses over ice

3. Pour sparkling water as a final step

4. Garnish with jalapeño and a blood orange slice.

For who asked I’m posting this here for you to save. Here’s how I do a grazing board/charcuterie:

I kind of enjoy a spread that looks undone and messy. But to keep it easy, I use the rule of 3: three fruits, three meats, three cheeses. Then you can add your favorite starches (bread/crackers) and fill in with nuts and jams.

Fruit:
I used two colors of grapes, mandarins with the leaves, and pears, but you could use any seasonal fruit. Pomegranate would be beautiful, as well as fresh figs sliced lengthwise. Dried fruits are also a great choice!

Cheese:
I always include variations of goat cheese since it’s easier for those (by those, I mean me😂) who are lactose intolerant. Some faves are goat Brie, drunken goat, truffle goat, and smoky goat Gouda. There are also so many great cows milk cheeses like Brie and aged cheddar, Gorgonzola… use whatever you like!

Meats:
I like nitrate free meats in variations like soppressata salami, chorizo, and prosciutto. Again, pick your favorite three and go with it:)

TO ASSEMBLE:
1. Start with a roll of unbleached, uncoated butcher paper. I used a 36” wide roll but they also come in 24” if you want more of a runner. You could also use bleached parchment :)

2. I did this part last, but place your candles and vases of greenery down the center.

3. Next, I spread my grapes throughout the table, then nestled in my mandarins and pears.

4. Then I placed the cheeses throughout, trying to keep the distribution equal.

5. You can be as simple (piles and rows) or as fancy (rosettes and shapes) as you want with the meats. I just quickly placed one type at a time and evenly distributed in groups and piles.

6. Then I added my crackers (I used simple mills gf and buttery twists from Whole Foods) then placed the jams and any nuts, and adjusted as needed :)

Delicata Squash Salad with Spicy Maple Vinaigrette

For the salad:
2 delicata squash
2 sweet potatoes
2 Tbsp Avocado Oil
Salt and pepper to taste
Arugula
1/2 cup Pomegranate seeds
4 oz Goat cheese, crumbled
1/2 cup Pistachios, chopped
Optional: Grilled Chicken Breast

For the spicy maple vinaigrette:
1/4 cup balsamic vinegar
1 tbsp Dijon mustard
2 tbsp maple syrup
3/4 cup olive oil
Salt and pepper to taste
1/8 tsp cayenne

Preheat oven to 425
Cut squash in half and deseed, then slice into wedges
Peel and cube the sweet potatoes
Toss in avocado oil, salt and peeper, then roast on a parchment lined baking sheet for 35-40 minutes, turning at 25 minutes and continuing to roast until golden brown and caramelized.

Meanwhile, whisk together dressing ingredients.

When squash/potatoes are finished, assemble salad and drizzle the dressing between layers and on top.
