Southwest sausage skillet for brunch tomorrow! The recipe is super simple and can be made pretty quickly. 1 lb ground pork sausage 1/2 green pepper, diced 1/2 red pepper, diced 1/2 yellow onion, diced 3/4 bag frozen hashbrowns 1 teaspoon parsley 1 & 1/2 teaspoon creole seasoning S & P to taste 1/3 cup colby jack cheese 12 large eggs - Preheat your oven to 425° F. Brown sausage in a large cast iron skillet with cooking oil, adding peppers and onions half way through. - When fully cooked, remove sausage mixture from the pan and set aside. Add hash browns in a thin layer, sprinkle spices and cook according to packaging directions. - When hashbrowns are lightly browned, pour sausage mixture over top, crack eggs on top and sprinkle with cheese. Place in oven at 350° F for 15 minutes or until egg whites are cooked through. I usually add a piece of foil lightly over the top to this step so that the eggs remain over medium.
