Dakdoritang (Korean Spicy Braised Chicken) Serves: 3–4 Time: ~45 minutes Ingredients: • 1.5–2 lbs bone-in chicken (drumsticks or chopped thighs) • 2–3 medium potatoes, peeled and chunked • 2 carrots, sliced • 1 onion, chopped • 3–4 cloves garlic, minced • 2–3 scallions, cut into 2-inch pieces • 2 cups water (or chicken broth for richer flavor) • 1 tbsp sesame oil (optional) Sauce: • 3 tbsp gochujang (Korean red pepper paste) • 1–2 tbsp gochugaru (Korean red pepper flakes, adjust for spice) • 2 tbsp soy sauce or ponzu • 1 tbsp brown sugar sugar (or honey) • 1 tbsp mirin (or rice vinegar) • Optional: black pepper, a dash of fish sauce Instructions: 1. Mix the sauce: In a bowl, combine all sauce ingredients until smooth. 2. Sear the chicken (optional but flavorful): In a large pot, heat a little oil and sear the chicken for 2–3 min per side. 3. Add sauce and water: Pour the sauce and water over the chicken. Bring to a boil. 4. Simmer: Reduce heat, cover, and simmer for 15 minutes. 5. Add veggies: Stir in potatoes, carrots, and onions. Simmer uncovered for another 20–25 minutes, until everything is tender and the sauce has thickened. 6. Finish: Stir in scallions and a drizzle of sesame oil in the last few minutes.
