Our summer solstice dinner party was a success!!!!

RECIPE BELOW: Lemon Posset (aka sunshine in dessert form)
Makes 10-12 servings šŸ‹

Okay, this one’s deceptively fancy. Like—it looks like it belongs at a dinner party with candlelight and linen napkins, but it’s actually just three ingredients, 5 mins of your time, & a little loving. 

Ingredients:
	•	2 cups heavy cream
	•	¾ cup granulated sugar
	•	5 tablespoons fresh lemon juice (from about 2 lemons)

Optional: a little lemon zest, berries, mint, or crushed shortbread to top 

How to:
	1.	Warm the cream & sugar
Pour the cream and sugar into a saucepan. Stir it gently over medium heat until the sugar dissolves, then bring it to a simmer—not a crazy boil, just little bubbles around the edges. Let it bubble gently for 3 minutes (set a timer!).
	2.	Add the lemon 
Turn off the heat. Stir in the lemon juice (and zest if you’re feeling fancy). You’ll see the cream start to thicken slightly—that’s the citrus doing its thing.
	3.	Pour and chill
Pour the mixture into the lemon bowls. Let them cool for a bit on the counter, then refrigerate for at least 1 hour (or overnight). They’ll set up into the dreamiest, silkiest texture.
	4.	Top & serve
When you’re ready to serve, you can top them with fresh berries, a sprig of mint, or crushed cookies if you want a little crunch. Or just eat it as is—it’s that good.

RECIPE BELOW!! My busy bee recipe for Spicy Tom Kha Noodle SoupšŸšŸ¤¤

Madeline’s Cozy Tom Kha Soup

Ingredients

For the broth:
	•	2 stalks lemongrass, smashed
	•	1 thumb-sized piece of fresh ginger, peeled and sliced
	•	1–2 red jalapeƱos, sliced
	•	½ yellow onion, chopped
	•	4 cups chicken broth (or more to taste)

For the soup:
	•	2 cups coconut milk
	•	1–2 tablespoons Thai red chili paste (optional, for heat and color)
	•	1 cup mushrooms (mixed varieties – small ones from the Asian market are great)
	•	1–2 chicken breasts, thinly sliced or chopped
	•	2 green onions, chopped
	•	½ cup fresh cilantro, roughly chopped
	•	Sweet potato noodles (optional – cook separately)
	•	Salt to taste
	•	Lime wedges, for serving

Instructions
	1.	Make the broth:
In a large Dutch oven, add lemongrass, ginger, red jalapeƱos, chopped onion, and chicken broth.
Simmer uncovered over low heat for at least 30 minutes, allowing the flavors to infuse deeply.
	2.	Strain the broth:
After simmering, strain out the solids. (Optional: leave in some ginger or lemongrass for extra flavor.)
	3.	Build the soup:
Return the strained broth to the pot. Stir in coconut milk and Thai red chili paste (if using) until combined.
Add the chicken, mushrooms, and green onions. Simmer until chicken is fully cooked and mushrooms are tender, about 10–12 minutes.
	4.	Finish it off:
Stir in chopped cilantro and salt to taste.
If using sweet potato noodles, cook them separately and add just before serving.
	5.	Serve:
Ladle into bowls and serve with lime wedges for brightness.

Dakdoritang (Korean Spicy Braised Chicken)

Serves: 3–4
Time: ~45 minutes

Ingredients:
	•	1.5–2 lbs bone-in chicken (drumsticks or chopped thighs)
	•	2–3 medium potatoes, peeled and chunked
	•	2 carrots, sliced
	•	1 onion, chopped
	•	3–4 cloves garlic, minced
	•	2–3 scallions, cut into 2-inch pieces
	•	2 cups water (or chicken broth for richer flavor)
	•	1 tbsp sesame oil (optional)

Sauce:
	•	3 tbsp gochujang (Korean red pepper paste)
	•	1–2 tbsp gochugaru (Korean red pepper flakes, adjust for spice)
	•	2 tbsp soy sauce or ponzu
	•	1 tbsp brown sugar sugar (or honey)
	•	1 tbsp mirin (or rice vinegar)
	•	Optional: black pepper, a dash of fish sauce

Instructions:
	1.	Mix the sauce: In a bowl, combine all sauce ingredients until smooth.
	2.	Sear the chicken (optional but flavorful): In a large pot, heat a little oil and sear the chicken for 2–3 min per side.
	3.	Add sauce and water: Pour the sauce and water over the chicken. Bring to a boil.
	4.	Simmer: Reduce heat, cover, and simmer for 15 minutes.
	5.	Add veggies: Stir in potatoes, carrots, and onions. Simmer uncovered for another 20–25 minutes, until everything is tender and the sauce has thickened.
	6.	Finish: Stir in scallions and a drizzle of sesame oil in the last few minutes.

Serve with:
	•	Steamed white rice
	•	Kimchi or pickled radish on the side

1/4 cup sugar
3 apples (peeled, sliced, and chopped)
2 tablespoons butter
Water (to speed up cooking)

For the Parfait Layers:

Cookie butter (enough to coat the bottom of your cup)
Greek yogurt (or yogurt of choice)
Granola
1-2 bananas (sliced)
Caramel sauce (for drizzling)

Instructions:

Caramelize the Apples:

In a large frying pan, melt 2 tablespoons of butter over medium heat.

Add the cinnamon, salt, and sugar to the butter and stir to combine.

Once the butter is melted, add the sliced apples. Cook, stirring occasionally.

To speed up cooking, add a splash of water to the pan and let the apples simmer until they begin to caramelize and become tender, but still have a bit of crispness.

Assemble the Parfait:

Start by spooning a layer of cookie butter into the bottom of a glass or parfait cup. Spread it out evenly.

Add a generous layer of yogurt on top of the cookie butter.

Layer in your caramelized apples.

Top with granola for a nice crunch.

Add banana slices on top of the granola.

Drizzle caramel sauce over the top to finish

RECIPE BELOW: My busy bee recipe for Thai red curry noodle soupšŸāœØ Who says making restaurant style food at home is complicated?? 

Ingredients:
For the Soup:

2 tbsp vegetable oil
2 tbsp red curry paste (adjust to taste)
1 can (400ml) coconut milk
3 cups chicken or vegetable broth
2 tbsp fish sauce
1 tbsp brown sugar 
1 tbsp lime juice
1 bell pepper, sliced
Cilantro, Basil, Green onion for garnish 

For the Noodles:

200g rice noodles (or egg noodles if preferred)

For the Protein (Optional):

1 cup cooked chicken, shrimp, or tofu (add as desired)

Instructions: 

Brown chicken and set aside 

Add your onions and bell peppers into the pot to soften. Once soft add in your garlic (being careful not to burn it)  and your red chili paste. Stir and add coconut milk and chicken broth. 

Bring to a boil then add in your chicken. Allow it to simmer for around 30 minutes. Add in your garnishes, lemon juice, brown sugar, fish sauce, and ponzu (my secret ingredient). 

Take off heat and stick in your rice noodles!! Now enjoy ;)
