Uncle Larry’s Chicken. Tommy’s cousin always talks about his late Uncle Larry’s Chicken so I asked him to give me the recipe. There’s no recipe for this one, just cook with your heart 💛 Let me know if you have questions or if I should remake this with measurements!

Ingredients:

✨ thin sliced chicken cutlets
✨ thinly sliced garlic
✨ extra virgin olive oil 
✨ Red wine vinegar (be generous, there should be juices left after cooking)
✨ salt and pepper 
✨ dried oregano

Broil high 6 inches from heating element until the top is golden, about 10 minutes. The bottom will be white but cooked through. Get some bread and dip it into the juice!

✨1 cup unbleached all purpose flour, or whole wheat or gluten-free mix like cup4cup, (5 oz total in weight)
✨2 teaspoons baking powder, make sure it’s not expired or it won’t rise
✨3/4 teaspoon kosher salt, use less if using table salt
✨1 cup 2% cottage cheese, excess liquid strained well (I like Good Culture)
✨1 egg white, or 1 large egg, beaten
✨optional: everything bagel seasoning, sesame seeds, poppy seeds, dried garlic flakes, dried onion flakes
