Caramel apple mimosas

Whole-Wheat Chili-Mac
Lean ground beef  12 oz
Onion
1 medium, chopped
Canned stewed tomatoes
14½ oz, Mexican-style, undrained
Canned tomato sauce
1¼ cup (s)
Canned diced green chiles
2 Tbsp
Chili powder
2 tsp
Ground cumin
1 tsp
Uncooked whole wheat pasta
1 cup (s)
Canned kidney beans


In a large skillet, cook beef and onion until meat is browned, about 10 minutes; drain off fat. Stir in undrained stewed tomatoes, tomato sauce, chili peppers, chili powder and cumin; bring to a boil.
Stir in uncooked macaroni and kidney beans.
Return to a boil, reduce heat, cover and simmer until macaroni is tender, about 15 minutes. Yields about 11/4 cups per serving.

Uncooked Yukon gold potato
1 pound(s), cut crosswise into 1/2-inch-thick slices
Kosher salt
1 tsp, divided
Black pepper
½ tsp, divided
Spanish onion
1½ pound(s), halved lengthwise and cut into ½-inch lengthwise slices (cut pole to pole, not across the equator)
Dried thyme
½ tsp
Baking soda
⅞ tsp
Gruyère cheese
½ cup(s), shredded

Preheat the oven to 450°F. Coat a small sheet pan (such as a quarter sheet pan) with cooking spray. Arrange the potato slices on the pan and coat the tops with cooking spray.
Sprinkle ½ tsp salt and ¼ tsp black pepper over the potato slices. Roast until browned and tender, about 25 minutes, turning slices over after 15 minutes.

Meanwhile, coat a large nonstick skillet with cooking spray and heat over medium-high.
Add the onions to the pan; cover and cook until starting to soften, about 5 minutes, stirring occasionally. Uncover the pan and sprinkle the onions with the remaining ½ tsp salt and ¼ tsp black pepper, the thyme, and baking soda. Reduce the heat to medium, cover the pan, and cook, stirring occasionally, until the onions are tender and deeply browned, 12 to 15 minutes.

Remove the potatoes from the oven & transfer to baking dish. Turn the oven to high broil. Arrange the caramelized onions over the potatoes and sprinkle evenly with the cheese. Broil until the cheese melts and begins to brown, it took mine 5-6 minutes

BBQ pork steaks

½ cup unsalted butter, room temperature 1(8-ounce) package of cream cheese, room temperature
1 teaspoon fresh lemon zest
1 tablespoon fresh lemon juice
1 ½ cups granulated sugar
2 eggs, room temperature
1 teaspoon lemon extract
1 teaspoon vanilla extract
2 ½ cups all-purpose flour
1 cup powdered sugar, divided
3 teaspoons baking powder
1/2 tsp salt

Cream your butter, cream cheese, lemon zest & juice. Add granulated sugar & cream together. Add eggs & extracts. 
In a separate bowl, combine dry ingredients (including 1/2 of the powdered sugar). Add to your cream cheese mixture.
Refrigerate dough for 30 minutes.
Scoop dough into remaining powder sugar & coat. 
Bake at 350° for 11-13 minutes.
We left some plain, add dried culinary lavender to some & topped a few with a glaze of lemon juice, lemon zest & powdered sugar.

Cottage pie baked potatoes

4 baking potatoes
1 pound lean ground beef
½ cup chopped onion (I use frozen when cooking)
1 minced garlic clove 
One 6-ounce can tomato paste
¼ cup Worcestershire sauce
1 1/2 cups beef broth
2 cups frozen peas & carrots thawed 
1 cup shredded cheddar

Wash potatoes, pierce with fork, drizzle with olive oil & salt. Bake at 400° for 1 hour +

Heat cast iron & add ground beef. Add onion, garlic & pinch of salt. Cook until brown, drain if necessary.

Stir in tomato paste, Worcestershire sauce, & broth.

Add veggies, s&p and simmer until thickened.

Cut open potatoes & spoon meat into each potato. Top with cheese. Broil 2-3 minutes.

Avocado salad- avocado, pomegranate, red onion, cilantro, S&P, olive oil & lemon juice

I have been craving this comfort food from my childhood for a while.

This recipe is inexpensive, easily modified for diet preferences, one pan & quick to throw together! I made mine organic & gluten free.

1 lb ground beef (turkey or chicken)
1 onion chopped
1 bell pepper chopped
Worcestershire sauce to taste
1/2 tsp garlic powder
S&P to taste
1.5 C chicken broth
15oz can diced tomatoes 
15oz can tomato sauce
1 bay leaf
1 tsp Italian seasoning 
1C uncooked elbow pasta (I used GF chickpea pasta) 

Add 1tbsp olive oil to pan on medium heat. Add ground beef & onions to pan. Add garlic powder, Worcestershire, S&P. Brown.

Add broth, tomatoes & sauce, bay leaf, bell pepper, & Italian seasoning. Bring to a boil then simmer 10 minutes.

Add pasta & simmer 12-14 minutes, stirring often.

Goes great with sourdough buttered bread!

Sshh, don’t tell Gram I’m giving y’all her no roll pie dough recipe!

This makes the most delicious, flaky crust & it couldn’t be easier! I used it for the base of a quiche last night. It’s perfect for sweet & savory pies!

Gram’s pie crust
1.5C flour 
1/2C vegetable oil
1.5 tbsp sugar
1/2 tsp salt
2 tbsp milk

Mix ingredients in pie pan and press around edges. Poke with fork. 

Can be baked unfilled at 350° for 10-15 minutes.

It’s soup season! Do you have a favorite soup?

Honestly, I can take or leave soup, but I make this one often. My husband absolutely loves it! It’s budget friendly, easy & quick!

Turn your pressure cooker on sauté & add a couple tablespoons butter.

Add a chopped onion, 2 diced carrots & 2 diced celery sticks. Sauté 5 minutes.

Add 1-2 ham hocks, diced ham steak, 2 bay leaves, 1 bag split peas, 3c chicken stock & 3c water. Use the natural release option & cook on high pressure for 20 minutes. Let the pressure naturally release for 10 minutes before you release the rest.

My husband likes to put the entire ham hock in his bowl & adds hot sauce. I just like the bits of ham steak and leave mine as is!

Cream spaghetti casserole

The perfect Sunday dinner!

Cook 1pk spaghetti according to directions.

Brown 2lb ground beef & 1/2c onion, S&P to taste. Stir in 2 large cans spaghetti sauce, 16oz sour cream & 1 cup mozzarella. Mix well.

Add spaghetti & mix.

Pour into greased casserole dish. Top with 1 cup mozzarella & 1/2 cup Parmesan. Cover & bake at 350° for 30 minutes.
